With a south wind or very gentle wind, the flakes are carefully collected when they have precipitated at the bottom of the salt pans. The collection must be precise to avoid breaking the flakes. Their mineral balance is perfect, especially rich in potassium, calcium, and magnesium.

Its format allows them to be sprinkled directly with the fingers, enhancing the flavor of any dish with a delicate and natural touch. It is the ideal salt for finishing dishes that require, in addition to the touch of flavor, an added visual element. Due to their easy melting, they enhance flavors appropriately.
