About this coffee

Yabitu Tume is a small town located in the Uraga highlands, within the renowned coffee region of Guji, in southern Ethiopia.

The washing station works with approximately 1,400 smallholder farmers. Most cultivate coffee on plots of about two hectares, located near their homes and surrounded by native trees such as Enset, Albizia, and Acacia.

The coffee plants are located between 1,900-2,300 meters above sea level. The cool climate and fertile clay soils promote a slower maturation of the cherries, helping to develop sweetness, complexity, and a particularly defined aromatic expression.

After selective harvesting, the ripe cherries are delivered to the station on the same day. The coffee is depulped and dry-fermented for 36–48h. Afterwards, the parchment is soaked in clean water to improve clarity and cup structure, before drying for 6–7 days on raised African beds.

The station also reuses coffee pulp as organic fertilizer and manages wastewater through systems located away from rivers, protecting community water sources.

Yabitu Tume begins with a clean and delicate floral expression.

Peach provides a juicy and ripe sweetness, accompanied by a tropical fruit that gains intensity as the coffee cools. The hint of black tea appears beneath the fruit, providing structure, depth, and a slight dryness in the finish.

An aromatic and defined cup, with clean acidity and a light texture. Expressive without being excessive... and with distinct layers that appear little by little.

Why we selected it

We were looking for a washed Ethiopia that retained the elegance and clarity associated with the origin, but offered more than just a floral profile.

Yabitu Tume combines that delicacy with ripe fruit and a black tea structure that keeps the whole cup in balance.

It has the precision we expect from a good washed Guji, along with enough sweetness and depth for each sip to reveal something different.
