Long before Ibiza became a world-famous party island, it was known for something far simpler — and far saltier. The island’s salt flats, known locally as Ses Salines, have been producing sea salt for over 2,500 years.

The Phoenicians, who settled in Ibiza around 654 BC, discovered the shallow, sun-drenched lagoons at the island’s southern tip were perfect for natural salt harvesting. All it took was seawater, summer heat, and time — the water would evaporate, leaving behind shimmering layers of pure white salt crystals.

For centuries, salt was one of Ibiza’s most valuable exports. In fact, it was often called “white gold” because of its importance for preserving food before refrigeration existed. Entire communities depended on the harvest season, and salt even influenced trade routes across the Mediterranean.

Today, Ses Salines is a protected natural park, home to flamingos, rare plants, and crystal-clear beaches. While industrial salt production has slowed, you can still buy Ibiza’s famous gourmet sea salt (sal de Ibiza) in shops — a tasty souvenir with a rich history.

Locals say Ibiza’s sunsets are extra magical when viewed from the salt flats, as the water turns into a giant mirror reflecting the sky.
